Las Liebres sits at the highest point of Colonia del Sacramento, with the city of Buenos Aires silhouetted against the sky in the distance and surrounded by 27 hectares of land. 4000 square metres of which is the rich and productive 100% organic vegetable garden that supplies the restaurant. The house itself is a 1920’s mansion restored in detail with a restaurant on the first floor and two living rooms. On the second floor are two stylish bedrooms and a library for the private use of the guests. With two additional rooms added in 2023.

Las Liebres is at 40 meters above sea level, the highest point of the district of Colonia, and of close proximity to the historic district, the port, the promenade and Route 21. A habitable house of the four seasons; the entire second floor designed to offer a unique lodging experience.

Design that combines classic and contemporary and the latest technology in performance. Four rooms of refined style: Skyla, Juanita, Sebastián & Agustina. Private library room and terrace for exclusive use.

The latest property to become available to guests is the elegant La Casa de la Vendimia. A house that can accommodate up to 8 people, ideal for groups of friends or families, with a living room, library and an exclusive swimming pool.

The restaurant is an integral proclamation in favour of the senses, the ideal place to free the senses and dream. The flavours; unprecedented, complex, summon the light and the light summons the music, which gives a tenuous membrane to the conversations. The wines offer their wisdom. Pedro Melnitzky is the owner and General Manager; Argentinean, plastic artist, living in Uruguay for 14 years. It is he who conceived the Comarca, bit by bit, as a dream capable of creating a legacy. A man of the world, with a very fine sensibility for art, architecture, interior design and landscaping. Pedro has achieved in Las Liebres his own territory where good taste and harmony can be established.

Waste Management
We keep to a strict policy for reducing the impact of solid waste. We have policies to reduce waste and management of recyclable and non-recyclable items.

The organic waste is used as compost, and the inorganic waste is collected by the Municipality of Machachi, with whom we have worked to resolve the waste management problems in the whole area.

We promote the reduction of plastic by offering drinks in returnable glass containers, buying products in large, reusable containers, and by being creative in looking for new ways to supply various necessities while being environmentally friendly.

Green Construction
The design and the materials of Hacienda El Porvenir follow traditional and ecological building systems; the walls are made of “tapial” (compacted earth). The roofs are built with straw and eucalyptus wood. The farmhouses revive the spirit and essence of the traditional Andean construction techniques used for hundreds of years. We use natural organic paint. The house makes the most out of daylight in many of its social areas by keeping the warmth in despite the cold surroundings.

Water consumption
We protect and refrain from contaminating water sources, and make sure that the withdrawal rate does not exceed the natural replenishment rate. We promote the responsible and appropriate use of water. We use biodegradable products in all our cleaning products.
